250 g mixed vegetables (zucchini, carrot, bell pepper)
40 g Cheesepop Cheddar (cup 65g)
2 tbsp olive oil
1.5 tsp oregano
2 tbsp balsamic vinegar
pinch of salt
Preheat the oven to 170 degrees Celsius and line a baking tray with a sheet of baking paper. Arrange the vegetables on the baking tray, drizzle with the olive oil and sprinkle with oregano and a pinch of salt. Roast the vegetables in the center of the preheated oven for 20-25 minutes.
Divide the rocket lettuce between 2 plates and top with the grilled vegetables. Drizzle the balsamic vinegar and sprinkle the Cheesepop Cheddar over it.
