This salad gets a nice bite by adding the puffed cheese balls

Lukewarm salad with roasted vegetables and Cheesepop Cheddar

  • 70 g rocket lettuce
  • 250 g mixed vegetables (zucchini, carrot, bell pepper)
  • 40 g Cheesepop Cheddar (cup 65g)
  • 2 tbsp olive oil
  • 1.5 tsp oregano
  • 2 tbsp balsamic vinegar
  • pinch of salt


  1. Preheat the oven to 170 degrees Celsius and line a baking tray with a sheet of baking paper. Arrange the vegetables on the baking tray, drizzle with the olive oil and sprinkle with oregano and a pinch of salt. Roast the vegetables in the center of the preheated oven for 20-25 minutes.
  2. Divide the rocket lettuce between 2 plates and top with the grilled vegetables. Drizzle the balsamic vinegar and sprinkle the Cheesepop Cheddar over it.
